Across South Australia, the 2019–2020 season got off to a good start with below-average (but sufficient) rainfall to provide decent moisture levels. e season was cool and windy, which impacted early vine growth, and resulted in smaller-than-average crops. Heat spikes around Christmas were isolated, and the lead-up to harvest was cool, allowing for ideal slow flavour development, and very little disease pressure. e small quantities of high-quality fruit produced rich wines with great depth and complexity

WINEMAKING

The fermentation was cool, and the fruit was on skins for 8–10 days to ensure the fruit vibrancy was enhanced. Careful use of selected yeast, and oak for background characters, add interest to this wine without deflecting interest from the red fruit aromas and flavours

VINTAGE CONDITIONS

The 2022 vintage was excellent across the regions of South Australia, with good winter rainfall, a mild growing season, and no prolonged heat waves. e early half of the growing season saw cooler-than-average conditions before warming up toward the beginning of summer in December. In the lead up to harvest, it was dry, and the afternoon and night temperatures were mild, it allowed the vines to evenly ripen the fruit it was carrying. When visiting vineyards, winemakers observed steady increases in maturity levels, and were able to make picking and scheduling decisions to achieve optimum ripeness and flavour expression

WINEMAKING

To ensure that minimal colour is extracted from the skins of the red grapes used in this blend, the fruit is processed quickly once it arrives at the winery, and the resultant softly-pressed juice has a pale pink colour, plenty of fresh fruits, and a light but expressive palate. These characteristics are enhanced by cool ferments to preserve delicate aromatics and fruitiness

It has been noted as one of the best growing seasons in recent years, with a wet winter allowing the vines to produce a healthy canopy, and mild temps and periodic rain providing good growing conditions. Very little heat stress was experienced across the growing regions. A cool and dry summer sustained even ripening, and allowed viticulturists and winemakers to harvest grapes at their optimal fruit expression

WINEMAKING

Fruit was harvested in the night to ensure that it was as cool as possible when picked, before being crushed, de-stemmed, and pressed to a settling tank. The juice was clarified and inoculated with selected yeast to express fruit characters. A slow, cool ferment at 14–16 degrees preserved the natural aromatics

The fruit was harvested in the crisp hours of the early morning and promptly transported to the winery for processing. A gentle extraction process produced pristine juice which was clarified before fermentation. The fermentation was conducted at 12–16 degrees C to ensure the fruit characters from the vineyard were maintained

The fruit was harvested in the cool morning, and held cold after crushing for a period of cold-soak to ensure gentle extraction of the fruit characters. The ferment was kept cool, and the wine pressed off skins into oak to complete fermentation. Blending and maturation occurred in barrels and stainless steel tanks, before stabilisation and filtration

WINEMAKING

The components of this blend were picked when the grapes were showing great fruit character, and processed separately in stainless steel fermenters—but always intended to be blended to make a soft, light, expressive and generous Grenache, Shiraz, and Malbec GSM. Following fermentation, the free-run, and pressings from the Grenache, were kept separate to ensure only soft and supple tannins were extracted into the free-run component.The blended wine has been matured on oak to give background influence only.
